Nukhat shurak is one of the favorite national dishes, which is prepared mainly in Samarkand region. Since ancient times, chickpeas have been used for medical purposes, later it became one of the main ingridients of daily ration. Chickpeas can reduce cholesterol and normalize blood pressure, regulate digestion, improve the condition of bones, neutralize toothache and inflammation of the gums, control diabetes, increase brain activity, normalize the nerve system, etc. This dish is prepared mainly in Samarkand region, as chickpeas are mostly grown in this area. Chickpea is a heat-loving plant, so the climate characteristic of this area, as well as the southern regions of our country (summer is hot, dry; winter is cold), is the most suitable place for growing this crop. In Samarkand, they start planting this plant in March. Chickpea has many names ̶ “nuhat”, “nahut”, “nahot”, “nukhut” (in Uzbekistan, Tajikistan, Turkmenistan, Kyrgyzstan, Azerbaijan, and Armenia); lamb chickpeas, bubbly, brain chickpeas, pupa chickpeas, fluffy (in Crimea and other regions of Russia), etc. Chickpeas are recommended not only for adults, but also for children. In particular, it has the necessary vitamins and trace elements for the development of a child. For vegetarians, chickpeas are a great substitute for meat.
